I’ve had this thing for chicken salad lately. I don’t know, maybe I saw it on one of those shows on Food Network. That has to be it, because I only watch two channels – HGTV and Food Network (otherwise it’s Disney or Nickelodeon in our house).
So, I’ve adapted one of their recipes, cut out the froo-froo stuff and added a fab new product. This is mayonaise like none other…Kraft Mayo with Olive Oil. It changes the taste and pumps up the good-for-you factor by cutting out half the fat! So, gets to dicin’.
4 cups, diced roasted chicken
1 rib celery, cut into 1/4-inch dice
4 scallions, diced
1 1/2 teaspoons celery salt
1 cup Kraft Mayo with Olive Oil
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
Freshly ground black pepper and garlic powder to taste
